Ingredients: (Serves 4)
¼ cup walnuts, finely chopped
2 tablespoons almonds, finely chopped
2 tablespoons pistachios, finely chopped
1 teaspoon ground cinnamon
2 tablespoons brown sugar
30g unsalted butter, softened
4 large figs
2 tablespoons honey
⅔ cup Greek yoghurt

Method:

  1. Preheat oven to 180°C (fan-forced).
  2. Combine walnuts, almonds and pistachios in a small, dry frying pan. Toast for 1-2 minutes or until fragrant and starting to colour. Transfer to a small bowl with cinnamon and brown sugar, then allow to cool slightly. Press in butter with a spatula or wooden spoon to make a paste.
    3.Trim stalk off figs, then cut an X from the top to two-thirds down towards the bottom. Squeeze the bottom of each fig to help it open up. Spoon the toasted nut mixture into each fig. Squeeze back into shape. Place figs snuggly in a small oven dish and drizzle with honey. Bake for 10-15 minutes or until figs are golden and soft.
    4.Serve figs with a dollop of Greek yoghurt. Spoon over baking juices as a syrup.
