INGREDIENTS
270G PRAWN MEAT GREEN
500G CRAB MEAT COOKED OR RAW
200G EGGS
50G SPRING ONIONS CHOPPED
10G PARSLEY CHOPPED
10G CHIVES
135G MAYONNAISE
10G GARLIC CRUSHED
85G PANKO BREADCRUMBS +PLUS EXTRA FOR COATING
SALT & PEPPER
put the prawn/crab meat in food processor with a couple of ice cubes and blend until smooth
add the eggs and blend for a short time
place the mixture in a bowl and add the remaining ingredients, season with salt and pepper
cook a little tester to check seasoning
allow the mixture to firm up in the fridge, about 20 minutes
form the mix into little cakes like the size of a burger pattie, coat in the extra panko crumbs
heat a pan with canola or vegetable oil 180 degrees and shallow fry golden on both side place in the oven for 2-3 minutes until they puff up drain on paper towels
serve with the salsa & some aioli

combine all ingredients in a bowl gently mix season with salt & pepper

Tasting Notes: A Sauvignon Blanc with incredible pedigree! The attention to detail starts with precision in the vineyard with clonal selection and closely planted rows to deliver better fruit exposure and quality coming into the winery. The wine is then fermented in French oak barrels (unlike 99% of other Sauvignon Blanc) which coupled with some “lees stirring” results in a wine of amazing texture and subtlety. The nose exudes notes of tropical fruits that Sauvignon Blanc is famous for, but with an understated nature which leads into the palate of passionfruit and pineapples which are perfectly married to the creamy texture generated by the oak and barrel maturation. Perfectly marries to foods like crayfish and crabs…
