GOAT’S LEG WITH PAPPARDELLE
1 GOAT LEG
SALT
PEPPER
½ GARLIC BULB
1 CELERY STICK DICED
1 CARROT DICED
1 BROWN ONION DICED
½ RED CAPSICUM
750G PEELED TOMATO OR CRUSHED
½ CUP WHITE WINE
½ CUP BEEF JUS
1 PACKET PAPPARDELLE
OLIVE OIL
CHOPPED PARSLEY
1 CUP FRESH PEAS
1 TBS BUTTER
SPLASH OF RED WINE
season the goat leg with salt, pepper & olive oil, roast on 240 degrees or seal in a roasted tray in a stove
add the celery, carrot, capsicum, onion & garlic roast in a 200 degree oven until you get some nice caramelization
add the white wine and put back in the oven and cook for 10 minutes
add the crushed tomato bay leaves & jus beef, cover with a lid and cook for 1.5- 2 hours until meat is very tender
boil some salted water for the pasta
pull the goat meat of the bone and add to a pan or pot
push the sauce through a strainer into the pan with the goat meat
cook the pasta until al dente
simmer the goat with sauce, add fresh peas and butter, season with salt & pepper
add the pasta, salt , olive oil and garnish with fresh parsley and grated parmesan

Tasting Notes: This is classic Australian Shiraz. The nose shows hints of leather, a touch of mocha and cedar spice rounded up with the striking presence of ripe berries. The palate is powerful and lengthy, masses of fruit coat the mouth and then the strong tannin profile extends into a silky and fine finish.
Often, people find it difficult to believe that an Adelaide Hills Shiraz can live up to the lofty standards set by its cousins in the Barossa Valley and McLaren Vale. To be fair, it’s no small task, the Barossa and McLaren Vale have set the standard in Australian Shiraz and with good reason. But, that’s how the Gutsy got its name – it takes guts to be able to stand up to those heavy hitters in the bigger, more famous Shiraz regions!
