CUT THE HALLOUMI INTO 1CM SLICES
GRILL THE HALLOUMI IN A HOT PAN WITH A LITTLE
OIL KEEP WARM
SERVE ALONGSIDE THE SALAD OR ON TOP

250G RED CABBAGE FINELY DICED
1 CUCUMBER DESEEDED FINELY DICED
1 LARGE CAPSICUM FINELY DICED
2 SPRING ONIONS FINELY SLECED
50G CORIANDER FINELY CHOPPED
200G POMEGRANATE SEEDS
1 TBS FINELY SLICED MINT
combine all ingredients in a bowl
DRESSING
3 tbs virgin olive oil
1 orange juiced
1 tbs white wine vinegar
2 tbs pomegranate molasses
½ tsp sea salt
combine all ingredients in a jar, shake well and dress the salad

Tasting Notes: Assyrtiko is bright and lively with lifted aromas of guava, mango, and passionfruit combined with lemon and granny smith apples. The palate has an elegant acid line, with lemon and passionfruit flavours upfront, progressing to granny smith apples further to the back. Good length with a cool, clean, and steely finish. The perfect wine to match with Halloumi & Pomegranate.
