PRAWNS IN POTATO STRINGS

INGREDIENTS
12 LARGE SA KING PRAWNS (CLEANED, TAIL ON) “CUTLETS “
SALT & PEPPER
2 LARGE WHITE POTATOES
VEGETABLE OIL

DRESSING
150ML VIRGIN OLIVE OIL
1 TBLS HONEY
2 TBLS CORIANDER CHOPPED 1 LIME
100ML RED WINE VINEGAR
SALT & PEPPER
1 FRENCH SHALLOT

SALAD
12 BABY COS LEAVES
3 AVOCADOS
2 CUPS ROCKET
2 TBLS MAYONNAISE

peel the potato, season the prawns with salt, pepper, use the japanese slicer and wrap the prawns in potato starting from tail to head

once all the prawns are wrapped blanch in the hot oil at 160

prepare the dressing by combining all ingredients

cut the avocado into wedges and place on the plate with lettuce in the centre re-fry the prawns in hot oil at 180 or use the air fryer until crisp

season the prawns with salt & pepper drizzle the dressing on top salad and around the plate, finish with mayonnaise and place on the salad

A partial whole bunch ferment contributes herbal lift and ethereal lightness to this elegant wine. Fresh bramble character melds with raspberry coulis, violet florals and dried bay leaves. At once graceful and refined, the concentration of fruit flavours and fine tannin ensure a fierce, and powerful finish.
