INGREDIENTS
6-12 CHICKEN THIGHS
½ PORK BELLY
1 CUP CUCUMBER
1 CUP CARROT JULIENNE DRESSED WITH A LITTLE
WHITE VINEGAR
1 CUP CORIANDER
VIETNAMESE ROLLS 1 PER PERSON
FRESH OR PICKLED CHILI TO TASTE
SESAME BUTTER
250G BUTTER
50G TOASTED SESAME SEEDS
50G SESAME OIL
25G SOY
combine all ingredients in a food processor
DRESSING
125g soySoy
25g Fish sauce
mix together
assemble the rolls
cut open your roll
spread a little of the sesame butter
place some cucumber and carrot in the roll
add the pork belly or grilled chicken you can do a combo if you want
add some fresh chili, pickled chili or siracha sauce
add some coriander leaves and drizzle a little of the dressing
CHICKEN MARINADE
1.5 BUNCHES CORIANDER WASH WELL KEEP ROOTS
1 TBSP BLACK PEPPER FRESHLY GROUND
1.5 TBSP ABC KETCHAP MANIS (SWEET SOY) #SUBSTITUE
WITH GF SOY IF GF REQUIRED
1.5 TBSP LIGHT SOY
2 TBSP SOY BEAN CHILI PASTE
1 STICK LEMON GRASS CHOPPED 1 TBSP SWEET CHILLI
SAUCE
1 TBSP FISH SAUCE
1 TBSP SUGAR
50ML WATER
Combine all ingredients and blend in a food processor
20 Chicken thighs skin on or off
Marinate the chicken for at least 4 hours then grill in a hot pan with a little oil and finish in the oven
PORK BELLY
MARINADE
1/4 CUP SOY SAUCE
1/3 CUP SHAOXING RICE WINE
2 TBSP BROWN SUGAR
2 CLOVES GARLIC MINCED
using a paper towel, pat skin of pork belly until it is completely dry.
mix marinade ingredients in a bowl and then pour into a rectangular pan that is big enough to hold the pork belly.
place pork belly into the pan, making sure only the meat touches the marinade and the skin stays completely dry.
if the marinade level is too high you can pour some of it out.
place in fridge for several hours or overnight.
