2 LARGE KESTRAL POTATOES
VEGETABLE OIL
DRESSING
150ML VIRGIN OLIVE OIL
1 TBLS HONEY
2 TBLS CORIANDER CHOPPED
1 LIME
100ML WHITE VINEGAR
SALT & PEPPER
1 FRENCH SHALLOTS
3 AVOCADOS
2 CUPS MIXED LETTUCE
2 TBLS MAYONNAISE
peel the potato, season the prawns with salt, pepper, use the japanese slicer and wrap the prawns in potato starting from tail to head
once all the prawns are wrapped blanch in the hot oil at 170
prepare the dressing by combining all ingredients
cut the avocado into wedges and place on the plate with lettuce in the centre
refry the prawns in hot oil at 180 or use the air fryer until crisp
season the prawns with salt & pepper drizzle the dressing on top salad and around the plate, finish with mayonnaise and place on the salad
